Ingredients: 1 package 9 oz chocolate wafers. 1/2 teaspoon peppermint extract. 8 oz semisweet chocolate, chopped. 1 teaspoon vegetable oil.
Instructions: Place the chocolate wafers in a food processor and blend until they form fine crumbs. Add the peppermint extract to the crumbs and pulse a few times to combine. Scoop out small portions of the mixture and roll them into 1-inch balls. Place them on a baking sheet lined with parchment paper and flatten them with your fingers to create thin, round cookies. Place the baking sheet in the refrigerator for about 15 minutes to firm up the cookies. While the cookies are chilling, melt the semisweet chocolate in a microwave-safe bowl in 20-second intervals, stirring after each interval, until smooth. Stir in the vegetable oil to create a glossy texture. Remove the baking sheet from the refrigerator and dip each cookie into the melted chocolate, coating it completely. Use a fork to lift the cookie out of the chocolate, allowing excess chocolate to drip off.
