250g plain flour
2 tsp baking powder
1 tsp bicarbonate of soda
2g ground cinnamon
½ tsp salt
300g caster sugar
3 large eggs
240ml vegetable oil
2 tsp vanilla extract
220g carrots, finely grated
150g crushed pineapple, well drained
60g walnuts, chopped (optional)
Frosting:
225g cream cheese, softened
115g unsalted butter, softened
240g icing sugar
1 tsp vanilla extract
Method:
1 Prep: Preheat oven to 180°C (160°C fan/gas mark 4). Grease and flour a 23cm x 33cm baking tin.
2 Dry: Whisk flour, baking powder, bicarb, cinnamon, and salt in a bowl.
3 Wet: In a large bowl, whisk sugar, eggs, oil, and vanilla until pale and creamy.
4 Combine: Gradually fold the dry mix into the wet until just combined.
5 Fold: Gently stir in the grated carrots, drained pineapple, and walnuts.
6 Bake: Spread into the tin and bake for 35–40 mins (until a skewer comes out clean). Cool completely.
7 Frost: Beat cream cheese and butter until fluffy, then mix in icing sugar and vanilla. Spread over the cooled cake.
8 Garnish: Top with extra pineapple chunks and a little shredded carrot!

225g unsalted butter
210g light soft brown sugar
1 large egg + 1 yolk
1 tbsp white miso paste
1 tsp vanilla extract
160g plain flour
90g white chocolate chips
Topping: Salted miso caramel drizzle + black sesame seeds
Instructions:
1 Melt butter and sugar in a pan on the hob until smooth.
2 Whisk in miso, egg, yolk, and vanilla.
3 Fold in plain flour and white chocolate chips.
4 Bake at 160°C (fan) for 20-25 mins on a baking tray lined with baking paper.
5 Drizzle with miso-caramel, sea salt, and black sesame seeds while warm!
