Ingredients: 2 racks of baby back ribs. 1 cup of your favorite BBQ rub. 1/2 cup of brown sugar. 1/4 cup of paprika. 1 tablespoon of black pepper. 1 tablespoon of salt. 1 tablespoon of garlic powder. 1 tablespoon of onion powder. 1 teaspoon of cayenne pepper. 2 cups of hickory wood chips, soaked in water. BBQ sauce for glazing.
Instructions: Preheat your grill to 225F 107C using indirect heat. Remove the membrane from the back of the ribs for better flavor penetration. In a bowl, mix together the BBQ rub, brown sugar, paprika, black pepper, salt, garlic powder, onion powder, and cayenne pepper to create the dry rub. Rub the dry mixture generously over both sides of the ribs, ensuring an even coating. Place the soaked wood chips in a smoker box or wrap them in aluminum foil, then poke some holes. Position the wood chips close to the heat source for a smoky flavor. Place the ribs on the grill grates, bone side down, away from direct heat. Close the lid and smoke for about 3 hours, maintaining a consistent temperature. During the last 30 minutes of smoking, baste the ribs with your favorite BBQ sauce for a sticky glaze. Once the ribs are tender and have a beautiful caramelized crust, remove them from the grill. Let the ribs rest for a few minutes before slicing between the bones. Serve the succulent BBQ ribs with extra sauce on the side and enjoy the mancave feast!
