McLyn does A J I S E N R A M E N My Scottish McAunty is heading to Glasgow and has time to spare after arriving from Nelson before her Big Bird flight. She worked out with a friend at Next Gen, had a swim and then watched the ASB Tennis from the pool balcony. Uncle then picked her up and took her to Ajisen Ramen in Newmarket to fuel up before she checks in for her late night flight. It’s all vegetarian for McLyn - crispy nori chips, agedashi tofu and the Vegetarian Ramen. McUncle had his usual dry ramen as it reminds him (vaguely) of the Kolo Mee from Sarawak. But why would you go to a ramen joint and have a dish that reminds you of a noodle dish from another cuisine? He will need to ask a food psychologist. McUncle had a Ramune (carbonated lemonade & soda water) to go with his ramen and we both had a chuckle about the glass marble in the neck of the bottle. The name Ramune is derived from “lemonade”. New Year’s Ramen Honours List Lady Rosemary is still recycling her Christmas turkey so Uncle decided she needed a break and took her to Ajisen Ramen in the Hairdresser’s Car, a short hop from her mansion in Parnell. A warm welcome awaited us from Tracy at front of house and even Chef Jim came from the kitchen to bow and say こんにちは Kon'nichiwa. Lady Rosemary just had morning tea of Queen Elizabeth cake with Earl Grey so she said she couldn’t handle ramen bowls of slurping goodness. Instead she choose edamame, renkon chips and Gyoza with Ajisen mayo and tuna flakes. Uncle went full hog with the Dry Ramen (complete with chilli bean paste) so as to cut down the incidence of unbecoming slurping. Lady Rosemary was so impressed with th food and shop fitout she said she would be bringing her grandchildren here pronto. And her children too. Time for a R A M U N E After finding his car at the new Westfield Broadway shopping duoplex, Uncle headed to the other end of Newmarket to sit down at Ajisen Ramen and contemplate the meaning of life. Young people love Ramune, the Japanese original carbonated water. The ones next to Uncle put their dainty hands over their mouths and titter with giggles and excitement. It could be the glass marble that floats at the neck of the bottle. The less-hassled dining companion chose the Dry Ramen - dry tossed ramen with minced pork, chashu, tamago, scallion with onion oil. You can mix in the chilli bean paste but be aware of the saltiness. Ask for a miso soup on the side. Uncle wanted to try the Paiku (braised pork spare ribs) Ramen but wary of gamey “sao wei” in the pork, opted for the Teriyaki Chicken Ramen - Kumamoto based broth with tamago, grilled teriyaki chicken, scallion and kikurage. Today’s Kumamoto broth is rich and flavoursome, the ramen done “firm”. Uncle enjoyed the ramen. When you have good ramen, all is good with the world. Uncle did get to try the Paiku spare ribs sent out by the kitchen to sample. A J I S E N R A M E N The queue is out the door. The soft opening weeks for Ajisen Ramen is over. They are officially open. Uncle takes Aunty Dot for her first visit to Ajisen Ramen. She reacts like a Mainland Chinese tourist craning her just healed neck from whiplash - yes, the fit-out of Ajisen is truly wondrous, with lanterns and Japanese iconography. We finally settle for small plates of Nori Crackers and Agedashi Tofu. Aunty chose the Paiku Ramen - Ajisen famous white pork bone broth with the ramen topped with slowly braised succulent pork ribs, crispy kikurage (wood ear mushrooms), soy egg (tamago) done onsen style, with fresh scallions as garnish. Aunty finished the whole bowl. Not a spoonful of the Kumamoto pork broth is wasted. Uncle wants to try the Dry Ramen - when served it resembles the famous Kolo Mee of Sarawak. The ramen is served with pork mince and charsu plus a chilli bean paste with which you mix into the dry ramen. You can request for a side bowl of soup of white pork broth. Our lunch at Ajisen is indeed splendid.
