Ingredients: 4 cups kale, thinly sliced. 1/2 cup red cabbage, thinly sliced. 1/4 cup carrots, grated. 1/4 cup red onion, finely chopped. 1/2 cup toasted walnuts. 1/4 cup dried cranberries. 1/4 cup grated Parmesan cheese. Salt and pepper to taste.
Instructions: Thinly slice the kale, red cabbage, carrots, and red onion, then put them all in a large bowl. Throw the salad ingredients into a bowl and mix them well. Toast the walnuts over medium-low heat in a small skillet for two to three minutes, until they smell good and get a little brown. Watch out not to burn them. Take them off the heat and let them cool down. After the toasted walnuts have cooled, cut them up into small pieces. Grate the Parmesan cheese and add it to the salad along with the chopped toasted walnuts and dried cranberries. Add salt and pepper to the salad as needed. You can also use your favorite salad dressing if you want to. Throw it all together to make sure all the ingredients are well mixed.
