This Blood Orange Chicken with Whiskey and Green Olives recipe combines the sweetness of blood orange juice with the bold flavor of whiskey, all complemented by the briny goodness of green olives. It's a delicious and unique stir-fry that's sure to impress your taste buds.
Ingredients: 4 boneless, skinless chicken breasts. 1/2 cup blood orange juice. 1/4 cup whiskey. 1/4 cup green olives, pitted and sliced. 2 tablespoons olive oil. 2 cloves garlic, minced. 1 teaspoon fresh rosemary, minced. Salt and pepper to taste.
Instructions: Whisk together blood orange juice, whiskey, finely chopped garlic, and fresh rosemary in a bowl. To taste, add salt and pepper for seasoning. Pour the marinade over the chicken breasts and place them in a plastic bag that can be sealed. After sealing the bag, chill it for a minimum of half an hour or for up to four hours. In a big skillet set over medium-high heat, warm up the olive oil. After taking the chicken out of the marinade and saving the marinade, place it back in the skillet. Cook the chicken until it's cooked through and the center is no longer pink, about 45 minutes on each side. After taking the chicken out of the skillet, set it aside. After adding the sliced green olives to the skillet, pour in the marinade that was set aside. After bringing to a simmer, cook for five to seven minutes, or until the sauce has thickened and reduced. After cooking, place the chicken back in the skillet and cover it with sauce. For complete heating, cook for a further two to three minutes. If desired, top the hot Blood Orange Chicken with Whiskey and Green Olives with extra rosemary.
