My husband’s parents immigrated from the Philippines, and he’s always talked about adobo as this amazing Filipino dish. Amazingly, though we’ve been married for ten years, together for 16 years (friends for 17, damn, nearly 20 years he’s been in my life now), I’ve never had it. Pancit, egg rolls and empanadas are common fair at his family events but adobo never made an appearance.
