Two Hour Yeast Rolls
1st mixture: 2 cakes compressed yeast 1 tsp sugar in 1/4 c warm water Set in warm place 15 min
2nd mixture: 1/3 c butter or oleo 2 Tbsp sugar 2 tsp salt 1 3/4 c scalded cooled milk
When second mixture is cool, add to first mixture. Add 4 c bread flour and mix thoroughly with spoon. Cover and let rise in warm place 1 hour. Stir down and let rise 1/2 hour when made in buns. Bake at 425° for 15 min or more. Yield 2 dozen rolls.
This is a soft dough. Use as little flour as possible. Use 1 pkg Fleischmann’s and one of Star yeast.
