This Paleo Whole30 Chicken and Vegetable Casserole is a perfect meal prep option for a quick and easy, healthy dinner. Packed with protein and nutrient-rich veggies, it's a delicious way to stay on track with your dietary goals.
Ingredients: 2 lbs boneless, skinless chicken breasts, diced. 3 cups broccoli florets. 2 cups cauliflower florets. 1 cup carrots, sliced. 1 cup bell peppers, diced. 1 cup onions, chopped. 2 cloves garlic, minced. 1/4 cup olive oil. 1 tsp dried thyme. 1 tsp dried rosemary. 1 tsp dried oregano. Salt and pepper to taste.
Instructions: Set the oven temperature to 375F 190C. Add the diced chicken, bell peppers, onions, carrots, broccoli, and cauliflower to a large mixing bowl. Mix the olive oil, minced garlic, dried oregano, dried rosemary, dried thyme, and salt and pepper in a small bowl. Toss to ensure that the chicken and veggies are evenly coated after adding the olive oil mixture. Spoon the blend into a sizable casserole dish. Once the oven is preheated, bake the casserole dish covered with foil for 25 to 30 minutes, or until the chicken is cooked through and the vegetables are soft. Take off the foil and continue baking for a further ten to fifteen minutes, so that the top begins to lightly brown. Enjoy your Paleo Whole30-compliant casserole hot out of the oven!
