i’m definitely not bitter about that or the fact that they chose that season to cram two big storylines into it, or that while every season had a flashbacky episode like the one where gerard and deucalion remembered how they fucked each other over, they condensed lydia’s grandmother’s backstory into 10 seconds, it was totally fun
Okay I haven't read through your entire post yet but when I say 'moved to town' I mean from the Dragonfly to their house in Stars Hollow proper. But yes, your analysis is correct. They screwed up their timeline.

but even if they moved from the independence inn (the dragonfly was the inn lorelai and sookie started, not the one she lived in with rory as a kid) into stars hollow proper when rory was like 5 or 6, that’s still at least a year before the latest luke could’ve opened the diner. if he opened it a few years before that, it would’ve even been already in town by the time they moved in, so there’s even less of an excuse for them to have not seen him around or gone into the store
Okay so i was bored and tried to timeline Gilmore Girls and here goes: In season 6 April Nardini turns 13, meaning that '8 years' before season 5, she was 4. In one episode, April's mom says she was there when he opened the diner, presumably pre-April, meaning that the Luke's has been open at LEAST 4 years before Luke and Lorelai meet. When Rory and Lorelai move to town Luke's has been open for ~3 years. So, there's a year or two of them living in town but somehow they don't meet Luke. SURE.

okay. so rory was about a year old when they moved to stars hollow, and lorelai would still be new to the whole single motherhood thing, and without any financial help from her parents, so i can sort of see lorelai being cooped up with rory in their room at the inn, working non-stop for the first couple of years they were in town.
but ok. rory is 15 turning 16 in season 1. so three years before season 1, she was 12 and april was 4. so when april was born, rory was 8, so the diner had to have opened at least a year before that–probably more. and rory and lorelai moved to stars hollow when rory was 1.
so lorelai and rory had been in stars hollow for roughly 6 years by the absolute latest time the diner could have opened–but it probably opened years before that.
regardless, tho. even if he had opened the diner when rory was 7, that’s still already 8 years before the show even starts. which would mean, like u said, that it had taken lorelai three years to go into the diner after it opened, which is ridiculous because even if lorelai had spent the first 2 or 3 years cooped up inside and not participating in town stuff or rly exploring stars hollow, we know for a fact that rory was participating in ballet and stuff by the time she was 5 or 6, and also elementary school, which means lorelai would totally be involved in town stuff at that point, and there’s no way that a lorelai who’s already engaged with town stuff would wait three years to enter luke’s diner. and even if she somehow did avoid luke’s diner for three years, stars hollow is tiny and there’s no way they wouldn’t have at least bumped into each other around the town
so. clearly the show fucked up its own timeline. i just don’t know how to fix it without just straight up saying “the show got it wrong, it wasn’t 8 years, it was 10 or 11 years” but that would imply that luke somehow got the date wrong, which he clearly wouldn’t do bc he has been pining for lorelai since the minute they met
