Ingredients: 4 halibut fillets 6 ounces each. Salt and pepper to taste. 2 tablespoons olive oil. 1 cup roasted red peppers, drained. 1/2 cup almonds, toasted. 2 cloves garlic, minced. 2 tablespoons fresh parsley leaves. 1 tablespoon sherry vinegar. 1/4 teaspoon smoked paprika. 1/4 cup olive oil. Lemon wedges, for serving.
Instructions: Season the halibut fillets with salt and pepper. Heat olive oil in a large skillet over medium-high heat. Sear the halibut fillets for 4-5 minutes on each side, or until cooked through. Meanwhile, in a food processor, combine roasted red peppers, almonds, garlic, parsley, sherry vinegar, and smoked paprika. Pulse until finely chopped. With the food processor running, slowly pour in the olive oil until the sauce is smooth. Serve the seared halibut topped with Romesco sauce and lemon wedges on the side.
