Ingredients: 1 block tofu, pressed and cubed. 2 tablespoons cornstarch. 2 tablespoons vegetable oil. 3 cloves garlic, minced. 1 tablespoon ginger, minced. 2 tablespoons black bean sauce. 1 tablespoon soy sauce. 1 tablespoon rice vinegar. 1 tablespoon brown sugar. 1/2 cup vegetable broth. 1 tablespoon cornstarch mixed with 2 tablespoons water. Green onions, thinly sliced for garnish.
Instructions: In a bowl, toss cubed tofu with cornstarch until evenly coated. Heat vegetable oil in a skillet over medium-high heat. Add tofu cubes and cook until crispy and golden brown on all sides. Remove tofu from skillet and set aside. In the same skillet, add a bit more oil if needed. Saut garlic and ginger until fragrant. Add black bean sauce, soy sauce, rice vinegar, brown sugar, and vegetable broth to the skillet. Stir well to combine. Bring the sauce to a simmer, then stir in the cornstarch-water mixture. Cook until the sauce thickens. Return the crispy tofu to the skillet, tossing gently to coat with the sauce. Cook for another 2-3 minutes until the tofu is heated through and well coated with sauce. Garnish with thinly sliced green onions before serving. Serve hot with rice or noodles.
