Ingredients: 1 cup butter, softened. 1 cup granulated sugar. 1 large egg. 2 teaspoons vanilla extract. 2 3/4 cups all-purpose flour. 1 teaspoon baking powder. 1/2 teaspoon salt. 1 tablespoon ground cinnamon. 1/2 cup brown sugar. 1/4 cup chopped pecans optional. 1/4 cup raisins optional. For the glaze:. 1 cup powdered sugar. 2 tablespoons milk. 1/2 teaspoon vanilla extract.
Instructions: Melt the butter and mix it with the sugar in a large bowl until the mixture is light and fluffy. Add the egg and vanilla extract and mix them in well. Mix the flour, baking powder, and salt together in a different bowl. Mix the dry ingredients into the wet ingredients one at a time until a dough forms. Split the dough in half, wrap each half in plastic wrap, and put both halves in the fridge for at least an hour. Warm the oven up to 350F 175C and put parchment paper on a baking sheet. On a floured surface, roll out one piece of dough into a rectangle that is about 1/4 inch thick. Put the brown sugar and ground cinnamon in a small bowl and mix them together. The cinnamon-sugar mix should be spread out evenly over the rolled-out dough. If you want, you can also add chopped pecans and raisins. Wrap the dough carefully around one of the longer edges and roll it up into a tight log. The log should be cut into cookies that are about 1/2-inch to 3/4-inch thick. Place the cookies on the baking sheet that has been prepared. After the oven is hot, bake for 10 to 12 minutes, or until the edges are just beginning to turn golden. For a few minutes, let the cookies cool on the baking sheet. Then, move them to a wire rack to cool completely. Powdered sugar, milk, and vanilla extract should be mixed together for the glaze until it is smooth and easy to drizzle. Add the glaze to the cookies after they have cooled.
