To me the appeal is that they're always evoking the rawest most intense and visceral form of every emotion in each other. It started with hatred, anger, self pity and fear, but it also evolves into lust and adoration and consumption and all that good stuff.
They're also very pathetic just in general. James randomly has a complete 180 the moment he realises he's in love, he's still insufferable and bothering Severus, except in a romantic sense now. Severus obviously does not deal with this in any normal way
They always will be very power dynamic-y but in a shifting way. And one way that reflects is that even when they settle into a romantic relationship James is very apologetic [kind of, it's a bit more nuanced than that] for how things were between them and Severus takes advantage of that. This is the strangest connection ever, but in one of the PJO books, maybe a bonus one, Annabeth says something about always keeping Percy on his toes, and Severus does the same thing. If you've read "When Pigs Fly", there's this one scene where baby Harry says something about James being in the "deer house" which is so funny and adorable, and I think James gets in trouble with Severus and sleeps on the couch often.
Also they're so sexy together are you kidding me? James with his tanned skin and dark curls and his FUCKING GLASSES and ugghhhggh and Severus is obviously. Fucking gorgeous and James HATES that he's so carnally attracted to a boy he spent all these years mocking but it's true. He is.
