ok so. dry vegetables in India are NOT just "dried veggies," they're a whole trade category with their own rules, and the biggest mistake anyone makes going in is thinking the English name is what matters. it's not. "sukha pyaz" gets you further in a mandi than "dried onion" ever will.

quick breakdown of what's actually in this category:

roots — onion (pyaz), garlic (lahsun), potato (aloo), carrot (gajar), ginger (adrak). this is the big leagues, especially onion + garlic out of Gujarat's Mahuva-Bhavnagar belt

leafy stuff — spinach (palak), methi, sarson, curry leaves. shrinks like crazy when dried but keeps the nutrients

everything else — peas (matar), okra (bhindi), tomato (tamatar), chilli (mirchi), bottle gourd (lauki/doodhi)

and don't sleep on the regional stuff. Kashmir has this whole hokh syun tradition — sun-drying brinjal, tomato, turnip, gourd for winter — that's still actively traded in Srinagar today. Rajasthan's got sukha saag, gunda, ker. these aren't just "dried vegetables," they're heritage products with a real niche/diaspora market.

the numbers are wild too — Gujarat alone exported 83,452 tonnes of dehydrated white onion in 2023-24. this isn't a side hustle category, there's real export infrastructure behind it already.

trade/resell from existing manufacturers (lowest capital, fastest)

small-batch drying with a tray/tunnel dryer (more control, mid capital)

full manufacturing unit (highest capital, highest ceiling)

just know the FSSAI rules changed in 2026 — as of April 1, Basic Registration covers up to ₹1.5 crore turnover, State License is ₹1.5cr–₹50cr, Central License is above that (or mandatory for exporters/e-commerce no matter what you turn over). licenses don't expire anymore once granted, but you still have to pay annual fees and file returns or it gets suspended.

sell through IndiaMART/TradeIndia for bulk domestic buyers, expos like SIAL India for the bigger institutional/export crowd, or direct exporter tie-ups if you're doing onion/garlic/spinach.
