So recently I was listening to canyon moon and came up with this; 

My belief is that Harry tells the story of a trip he has to take for work. A time he has to spend away from Louis while he is doing different things necessary for his career. To cope with missing him, he thinks about the time spent together in this “Canyon Moon” which we don’t know if it is a specific place or an idea but it’s the happy thought that helps him while he’s away. 

On to the lyrics: 

“You gotta see it to believe it Sky never looked so blue So hard to leave it That's what I always do” 

Here I have the weird theory that he’s talking about the sky back home. He’s talking about England and how the sky is finally blue (which doesn’t usually happen in the UK) and how it’s unbelievable (”gotta see it to believe it”) and how he feels guilty about leaving (”That’s what I always do”) even though it is difficult for him to leave the UK and what it represents = home = Louis. 

“So I keep thinking back to A time under the canyon moon”

So to cope with the feeling of leaving Louis behind and missing him, he thinks about the time they spent together under the canyon moon.

Harry is now in LA, he’s working on some music. Kid Harpoon’s wife is called Jenny so we can interpret that he is spending time with him, working on some music while being exposed to another relationship; to two people who love each other. He is a witness to the domesticity of a friend’s relationship. 

And I keep thinking back to A time under the canyon moon I'll be gone too long from you And that exposure to a relationship makes him miss his own relationship; makes him go back to his happy place and also be saddened by the fact that there is still a long while to go before he can go back to his own partner (”I’ll be gone too long from you”). 

Staring at the ceiling Two weeks and I'll be home Carry the feeling Through Paris, all through Rome

Now there’s only two week left of this distance, this trip. He is closer to going back home and that hope, that feeling is what carries him through his travels.

He is clearly excited by the prospect of going home soon and that is the mantra that keeps him motivated and strong through the final two weeks. 

Quick pause in conversation She plays songs I've never heard An old lover's hippie music Pretends not to know the words I do think in this paragraph he is talking about Camille. However, I don’t think it makes sense if it was about a real relationship with Camille. Here, he is talking about spending time with her; they have to go out and be seen together, talk and get to know each other. However, the conversation doesn’t flow as easily (”Quick pause in conversation”) and they don't really have a lot in common (”Plays songs I’ve never heard”). 

And I keep thinking back to A time under the canyon moon I'll be gone too long from you

So, while he is spending time with Camille, doing his job, he is thinking back to that happy place; to Louis. And here’s where it wouldn’t make sense if it was about a real relationship between him and Camille; Why would he be thinking about a time spent together with his lover, wishing to go back home, to go back to that place, when he is already spending time with his lover? He has to be talking about a different person when he talks about the canyon moon for it to make sense.  It wouldn't make sense for him to be sad about being “gone from” his loved one if he is already with them.
