Ingredients: 1 cup all-purpose flour. 2 tablespoons sugar. 1 teaspoon baking powder. 1/2 teaspoon baking soda. 1/4 teaspoon salt. 1 cup buttermilk. 1 egg. 2 tablespoons melted butter. 1/2 teaspoon vanilla extract. Maple syrup for drizzling. Fresh berries for garnish. Powdered sugar for dusting. Whipped cream for topping.
Instructions: Mix the flour, sugar, baking powder, baking soda, and salt together in a bowl. Mix the egg, melted butter, vanilla extract, and buttermilk in a different bowl using a whisk. Add the wet ingredients to the dry ones and mix them together just until they are mixed. Don't mix it too much; a few lumps are fine. Put a nonstick skillet on medium heat and use cooking spray or butter to lightly coat it. Drop a small amount of batter onto the skillet for each mini pancake. You decide how big or small they are. Start cooking when the top starts to bubble. Then turn it over and cook until both sides are golden brown. Put the mini pancakes on top of each other to make cute stacks. Spread maple syrup on top, then add fresh berries and finish with whipped cream. Add a little extra sweetness by dusting with powdered sugar.
