Ingredients: 1 1/2 cups all-purpose flour. 1 1/2 teaspoons baking powder. 1/2 teaspoon salt. 1/2 cup unsalted butter, softened. 1 cup granulated sugar. 2 large eggs. 1 teaspoon vanilla extract. 1/2 cup milk. Food coloring various colors.
Instructions: Preheat your oven to 350F 175C and line a cupcake tin with cupcake liners. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside. In a large bowl, cream together the softened butter and sugar until light and fluffy. Beat in the eggs, one at a time, followed by the vanilla extract. Gradually mix in the dry ingredients from step 2, alternating with the milk, beginning and ending with the dry mixture. Mix until just combined. Divide the cupcake batter into separate bowls, one for each color you'd like to use. Add food coloring to each bowl and stir until you achieve the desired colors. Fill each cupcake liner with a small amount of each colored batter to create a layered effect. Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center of a cupcake comes out clean. Allow the cupcakes to cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
