Savor the ideal pairing of crispy green beans and flavorful pancetta with this easy and delicious recipe. This traditional side dish gets a delightful twist from the addition of Parmesan cheese and fresh lemon juice.
Ingredients: 1 lb fresh green beans, trimmed. 4 oz pancetta, diced. 2 tbsp olive oil. 2 cloves garlic, minced. Salt and pepper to taste. 1/4 cup grated Parmesan cheese. 1 tbsp fresh lemon juice.
Instructions: To stop the cooking process, blanch the green beans for two to three minutes in boiling salted water before transferring them to an ice bath. Heat the olive oil in a big skillet over medium heat. Cook the chopped pancetta until it becomes crispy. When the garlic is fragrant, add the minced garlic to the skillet and saut it for one minute. Toss the blanched green beans with the pancetta and garlic in the skillet. To taste, add salt and pepper for seasoning. Saut the green beans for a further two to three minutes, or until they are crisp-tender. Take off the stove and cover the green beans with grated Parmesan cheese. To mix, toss. Just before serving, squeeze some fresh lemon juice over the green beans. Serve hot as a tasty accompaniment.
