Last night, I had the pleasure of cooking dinner for a marvelous advocacy organization that helps families navigate and celebrate life within the autism community. In honor of the special holiday dinner and these wonderful crusaders, I made a dessert featuring two ingredients that donβt usually get mixed up together in a pie - cranberries and limes. This dessert is plainly called Cranberry Lime Pie, but thereβs really nothing plain about it. With its gingersnap crust and whipped cranberry lime curd constitution (similar to key lime pie) it was sweet, tart, tangy and unexpected... just like all the best moments in life, especially around the holidays:) π Its been a whirlwind around here these past few days, jumping from my dadβs celebration of life party right into this funtime dinner, but if Iβve learned anything from my dad since his passing... itβs to say cheers more, to celebrate more. And to not only celebrate the highlights but also the everyday stuff... the good, the bad, the sad, the joyful, the busy, the quiet, the sweet and the tart. To celebrate life each and every way we possibly can because this is life and we are lucky to be a part of it. This year, Iβm wishing everyone more pie in the new year!
