Ingredients: - 2 1/3 cups almond flour - 1/3 cup coconut flour - 1/2 tsp baking soda - 2 eggs - 1/2 tbsp orange zest - 1 tsp vanilla extract - 1/2 cup orange juice - 1/4 cup honey - 2 tbsp melted coconut oil - 1 cup cranberries - 1/2 cup chopped pecans Instructions: 1. Preheat the oven to 175C (350F) and line a muffin tray with liners. 2. In a mixing bowl, whisk together the eggs, vanilla extract, melted coconut oil, honey, orange juice, and orange zest. Sprinkle the baking soda over the orange juice to activate it. Then, gradually add the almond flour and coconut flour, mixing on low speed until just combined; be careful not to over-mix. 3. Gently fold in the cranberries and chopped pecans using a spoon. 4. Spoon the batter into each muffin cup, filling them to the top and pressing down gently to pack them in. For an added touch, place a few extra cranberries on top of each muffin. 5. Bake for approximately 25 minutes, or until a toothpick inserted in the center comes out clean. Allow the muffins to cool in the tins for at least 20 minutes before transferring them to a wire rack.

In a large bowl, combine the gluten-free rolled oats, almond flour, dried cranberries, sliced almonds, baking soda, and salt. In a separate bowl, whisk together the honey or maple syrup, melted coconut oil, egg, vanilla extract, orange zest, and orange juice until well combined. Pour the wet ingredients into the dry ingredients and stir until everything is evenly mixed. Transfer the mixture into the prepared baking pan and press it down firmly to create an even layer.
