Ingredients: 4 cups corn kernels. 1 onion, diced. 2 cloves garlic, minced. 4 cups chicken or vegetable broth. 2 potatoes, diced. 1 cup heavy cream. Salt and pepper to taste. Chopped fresh parsley for garnish.
Instructions: Diced onion and minced garlic should be cooked in a large pot until the onions are soft. Toss the diced potatoes and corn kernels together in the pot. Put in chicken or vegetable broth and raise the heat. About 15 to 20 minutes, or until the potatoes are soft. With an immersion blender, blend some of the soup to make it thicker, but leave some corn and potato chunks in it. Add the heavy cream and season with pepper and salt to taste. Keep cooking for five more minutes. Serve hot with fresh parsley chopped on top. Have fun with your tasty corn chowder!
