This chopped Italian salad is full of different tastes and textures. It's a vegan dish that's great for any event because it's cool and filling.
Ingredients: 1 head romaine lettuce, chopped. 1 cup cherry tomatoes, halved. 1 cup cucumber, diced. 1/2 cup red onion, thinly sliced. 1/2 cup canned chickpeas, drained and rinsed. 1/4 cup black olives, sliced. 1/4 cup roasted red peppers, chopped. 1/4 cup fresh basil leaves, torn. 1/4 cup vegan mozzarella cheese, cubed. 2 tablespoons extra virgin olive oil. 2 tablespoons balsamic vinegar. Salt and pepper, to taste.
Instructions: Romaine lettuce, cherry tomatoes, cucumber, red onion, chickpeas, black olives, roasted red peppers, basil leaves, and vegan mozzarella cheese should all be put in a large bowl and mixed together. Add extra virgin olive oil and balsamic vinegar on top. Add pepper and salt to taste. Slowly toss until everything is covered. It can be served right away or put in the fridge to cool down until you're ready to serve.
