This is what i will cook for today a "Ginataang sitaw na may kalabasa", I just got that vegetable from the farm of my father in law, and the only thing I bought was coconut milk,
This one is a really easy recipe–it’s a mix of vegetables cooked in coconut milk that we call ‘ginataang gulay,’ I love to have this dish with some cooked rice for a really hearty and satisfying meal. Check out the really simple recipe below! Enjoy
Ginataang Gulay (Vegetables in Coconut Milk)
1 red onion, chopped,2 cloves of garlic, roughly chopped
1 coconut milk (I used only the ginataang gulay attached in the picture )*
long beans (sitaw), chopped into 3″ long pieces
1/2 small pumpkin (kalabasa), cut into 1.5 inch cubes (makes around 4 cups of 2″ cubes)
Steps: Heat a large pan or wok over medium high heat. Add 1 tbsp of oil and sauté the onions and garlic until aromatic. Add in the chili, if using, and sauté until lightly blistered, around 2 minutes. Afterwards, add in half of the coconut milk and vegetables.
Add in the vegetables then leave to boil for 10-12 minutes until the vegetables are almost cooked through.
Season with salt to taste
Leave to cook over medium high heat for a few more minutes until the vegetables are cooked through. Adjust seasoning depending on desired taste. Enjoy while hot with some steamed rice!
