These Easter Egg Coconut Cupcakes are a fun treat for kids and adults alike this Easter. The moist cupcakes taste like coconut and are filled with sweetened condensed milk. They are topped with whipped cream and mini chocolate Easter eggs, which makes them a simple and fun way to celebrate Easter.
Ingredients: 1 1/2 cups all-purpose flour. 1 1/2 tsp baking powder. 1/2 tsp salt. 1/2 cup unsalted butter, softened. 1 cup granulated sugar. 2 large eggs. 1 tsp vanilla extract. 1/2 cup coconut milk. 1/2 cup shredded coconut. 1/4 cup sweetened condensed milk. 1/2 cup whipped cream. Mini chocolate Easter eggs for decoration.
Instructions: Preheat your oven to 350F 175C and line a muffin tin with cupcake liners. In a bowl, whisk together the flour, baking powder, and salt. Set aside. In a separate mixing bowl, cream the softened butter and sugar until light and fluffy. Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract. Alternate adding the dry ingredients and the coconut milk to the wet mixture, starting and ending with the dry ingredients. Mix until just combined. Fold in the shredded coconut gently. Scoop the batter evenly into the prepared cupcake liners, filling each about 2/3 full. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean. Allow the cupcakes to cool in the tin for a few minutes, then transfer them to a wire rack to cool completely. Once cooled, use a small spoon to make a small indentation in the center of each cupcake. Fill each indentation with sweetened condensed milk.
