Ingredients: 2 ripe bananas. 1/2 cup cashews. 1 can coconut milk. 3 tablespoons chia seeds. 1 cup blueberries. 1 tablespoon maple syrup optional.
Instructions: Grab a banana and cut it up. Cashews, bananas, and coconut milk should all be mixed together until the mixture is smooth. Put the mixture in a container that can go in the freezer. Freeze for 4 to 6 hours, or until it's solid. Chia seeds should be mixed with one cup of water. Then, let it sit for 10 to 15 minutes, stirring every now and then, until it gets thick. To put it together, put banana ice cream in bowls, add chia pudding on top, and decorate with fresh blueberries. If you want, drizzle with maple syrup. Serve right away and enjoy!
