I was able to open my fridge door all the way today, and investigate my vegetable situation. Unfortunately, there were multiple casualties of time. The carrots, the leek, the potato, the radishes, and the mushrooms... Rest in compost. Farewell, eggs that had a BB of Oct 12.
I did manage to save the white squash, the cauliflower, the onions, and my four large sweet potatoes. I chopped all of that up, coated it in oil, salt and pepper, and spices. Then I broke it up into four cups each bag and froze it.
Dinner was two wraps, consisting of high protein tortillas, fried onions, romaine, sour cream, and lemon pepper hummus (which I also made today). I feel like a People again!
