Ingredients: 1 whole turkey 12-14 pounds. 2 tablespoons olive oil. 1 teaspoon sea salt. 1/2 teaspoon black pepper. 1 teaspoon dried rosemary. 1 teaspoon dried thyme. 1 teaspoon garlic powder. 1 cup fresh cranberries. 1/2 cup pure maple syrup. 1/4 cup fresh orange juice. 1 tablespoon grated orange zest.
Instructions: Set the oven temperature to 325F 163C. Use cold water to thoroughly rinse the turkey, then pat it dry with paper towels. To make a seasoning rub, combine olive oil, sea salt, black pepper, thyme, rosemary, and garlic powder in a small bowl. Apply the spice mixture evenly over the turkey, if at all possible, even under the skin. Turkey should be placed breast-side up on a roasting pan fitted with a roasting rack. For approximately three to five hours, or until the thickest part of the thigh registers 165F 74C, roast the turkey in the preheated oven. In a saucepan, mix fresh cranberries, maple syrup, orange juice, and grated orange zest while the turkey is roasting. Over medium heat, bring the cranberry sauce mixture to a simmer, stirring from time to time. Simmer for ten to fifteen minutes, or until the sauce thickens and the cranberries burst. After the turkey is cooked, take it out of the oven and give it a good 15 to 20 minutes to rest before carving. Present the homemade cranberry sauce alongside the Paleo roast turkey.
