These Vegan Chocolate Turtles are a delightful combination of chewy dates, crunchy pecans, and rich chocolate, finished with a sprinkle of sea salt. They make for a delicious and indulgent treat that's perfect for satisfying your sweet cravings.
Ingredients: 1 cup pitted dates, soaked in warm water for 10 minutes. 1 cup raw pecans. 1/2 cup vegan chocolate chips. 1 tbsp coconut oil. Sea salt, for sprinkling.
Instructions: Drain the soaked dates and pat them dry with a paper towel. In a food processor, combine the dates and pecans. Pulse until a sticky dough forms. Shape the dough into small round discs and place them on a baking sheet lined with parchment paper. In a small saucepan, melt the chocolate chips and coconut oil over low heat, stirring until smooth. Spoon the melted chocolate over each pecan disc, covering it completely. Sprinkle each turtle with a pinch of sea salt. Place the baking sheet in the refrigerator for at least 30 minutes to allow the chocolate to set. Once set, remove the turtles from the refrigerator and enjoy!
