Instructions: Preheat your oven to 350F 175C. Grease and flour two 9-inch round cake pans. In a large mixing bowl, combine flour, sugar, cocoa powder, baking powder, baking soda, and salt. Add eggs, buttermilk, vegetable oil, and vanilla extract to the dry ingredients. Mix until well combined. Pour in the boiling water and mix until the batter is smooth. The batter will be thin, but that's okay. Fold in 1 1/2 cups of dark chocolate chips into the batter. Divide the batter equally between the prepared pans and bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean. Remove the cakes from the oven and let them cool in the pans for 10 minutes. Then, remove the cakes from the pans and let them cool completely on a wire rack. In a small saucepan, melt the unsalted butter over low heat. Add the heavy cream and instant coffee granules. Stir until the mixture is smooth and well combined. Remove from heat and let it cool slightly. Using a skewer or toothpick, poke holes all over the cooled cakes. Pour the chocolate coffee mixture evenly over the cakes, allowing it to soak in. Melt the remaining 1 cup of dark chocolate chips in a microwave or on a double boiler. Dip the fresh strawberries into the melted chocolate and place them on parchment paper to harden.
