Ingredients: 1 cup almond flour. 1/4 cup unsweetened cocoa powder. 1/4 cup erythritol or sweetener of choice. 1/4 cup sugar-free chocolate chips. 2 tsp baking powder. 1/4 tsp salt. 2 large eggs. 1/4 cup unsweetened almond milk. 1/4 cup melted coconut oil. 1 tsp vanilla extract.
Instructions: Preheat your oven to 350F 175C and line a muffin tin with paper liners. In a mixing bowl, combine almond flour, cocoa powder, erythritol, chocolate chips, baking powder, and salt. In another bowl, whisk together eggs, almond milk, melted coconut oil, and vanilla extract. Pour the wet ingredients into the dry ingredients and stir until well combined. Divide the batter evenly among the muffin cups. Bake for 18-20 minutes or until a toothpick inserted into the center of a muffin comes out clean.
