I'm going to answer this for both Cho and Einri just cuz they've been the main ones I've been talking about so people here might know them kinda

Einri I feel is a pretty normal looking human man but he do got a little ugly to him. His features age him a bit. All his hair kind of drags his features down. But I wouldn't say he's bad looking and most people likely feel the same. Cho is initially not very attracted to him. Not his fault. Human men just tend to make her a little uncomfortable. Once he's a demon I think the fact more people find him attractive stems from his increase in confidence because he's can back up what he says more than he could before and confidence is sexy to a lot of people. (His wife however likes him best when he's pathetic)
I have to preface this by saying I think Cho is a really hot character. I probably wouldnt keep bringing her back and falling in love with her again if I didn't have this love of her and her design. I know I draw her hot. A lot of people in setting would not agree. Traits deemed monstrous are a danger and anything considered a monster is something that is to be culled. There are people who find her attractive but her appearance is fearsome to many. Early on in their story Einri calls her ugly in some way nearly every day. This is because he has been conditioned to view her inhuman traits negatively but he's actually very attracted to her height and muscles and body but doesn't understand why he's so transfixed on someone he is supposed to find unappealing and convinces himself that he's distracted by how repulsed he is by her. But he's always looking at her.

But going deeper into it his tastes are varied. He likes his partners a little older but initially saw himself settling down with someone his age. He has come to appreciate someone who can kick his ass and matches his competitive nature. As he comes to understand his bisexuality he likes similar features in men as he does in women. Cho specifically allows him to feel needed and to not need to be so in control of how he is seen by others. Despite the horrible things she does to him there is a safety with her because they continue to invent new scenarios in which he must serve her. And when he feels needed and useful he feels safe.
CHO tends to prefer more feminine partners. She has multiple partners the most important story wise being Einri, Avarice, and Madeleine. They are all very different from each other in body and personality so I guess her tastes are also kind of varied but her sexual and romantic partners are a lot more curated than her husband's. The thing that always gets her is she has this powerful need to care for someone. She's the world's deadliest mommy dom. She can't resist a partner letting her dote on them. Avarice is actually the only partner she isn't romantically compatible with because she is put off by being fussed over. Cho is also very intense about it.
