Blend until the mixture is smooth and creamy. You may need to scrape down the sides of the blender and blend again to ensure everything is well combined. Ingredients: 6 medium-sized potatoes. 1 cup grated pecorino cheese. 1/4 cup breadcrumbs. 1/4 cup chopped fresh parsley. Salt and pepper to taste. 1/2 cup mayonnaise. 2 tablespoons chipotle sauce. 1 tablespoon lemon juice. 1 teaspoon smoked paprika. Oil for frying.
Instructions: Preheat your fryer or oil in a deep pan to 350F 175C. Boil the potatoes until they're tender, then let them cool slightly. Once cool enough to handle, peel the potatoes and cut them into small cubes. In a bowl, mix together the cubed potatoes, grated pecorino cheese, breadcrumbs, chopped parsley, salt, and pepper until well combined. Form the mixture into small balls or pops. Deep fry the potato pops until they're golden brown and crispy, about 3-4 minutes. Meanwhile, prepare the smokey chipotle sauce by combining mayonnaise, chipotle sauce, lemon juice, and smoked paprika in a bowl. Mix well. Once the potato pops are fried, drain them on paper towels to remove excess oil. Serve the potato pops hot with the smokey chipotle sauce for dipping.

Salt and pepper to taste. 4 hamburger buns. 2 avocados, sliced. 1/2 cup Greek yogurt. 2 tablespoons chipotle peppers in adobo sauce, minced. 1 tablespoon lime juice. Lettuce leaves for garnish. Tomato slices for garnish.
Instructions: Grate Parmesan cheese over ground chicken, add diced red onion, chopped cilantro, ground cumin, garlic powder, salt, and pepper to a bowl. Combine well. Cut the chicken mixture into four equal parts and shape each one into a burger patty. Set a grill or a skillet over medium-high heat to get it hot. The chicken patties should be cooked for five to six minutes on each side, or until they are done all the way through and have nice grill marks. Warm the buns up on the grill or in a toaster until they are just barely browned while the chicken patties are cooking. Add Greek yogurt, lime juice, and minced chipotle peppers in adobo sauce to a small bowl. This will make the chipotle yogurt sauce. Spread a lot of chipotle yogurt sauce on the bottom half of each toasted bun before putting the burgers together. On top of the sauce, put a chicken patty. Then, add slices of avocado, lettuce leaves, and tomato slices. Put the other half of the toasted bun on top, and serve hot.
