This gluten-free Chilli Chicken is a flavorful Indo-Chinese dish that packs a punch of spices and tanginess. It's perfect for those who follow a gluten-free diet but still crave the deliciousness of classic Chilli Chicken.
Ingredients: 500g boneless chicken, cut into bite-sized pieces. 3 tbsp gluten-free soy sauce. 2 tbsp rice vinegar. 1 tbsp cornstarch. 1 tbsp sesame oil. 2 tbsp vegetable oil. 1 onion, chopped. 1 green bell pepper, diced. 1 red bell pepper, diced. 4 cloves garlic, minced. 1-inch ginger, grated. 2-3 green chilies, sliced. 1 tsp chili flakes adjust to taste. 1 tsp honey. Salt to taste. Spring onions for garnish.
Instructions: In a bowl, mix soy sauce, rice vinegar, cornstarch, sesame oil, and honey to make the marinade. Add chicken pieces to the marinade, mix well, and let it marinate for at least 30 minutes. Heat vegetable oil in a pan over medium-high heat. Add marinated chicken pieces and stir-fry until they are golden brown and cooked through. Remove chicken from the pan and set aside. In the same pan, add a little more oil if needed. Add chopped onion, minced garlic, grated ginger, sliced green chilies, and saut until onions are translucent. Add diced bell peppers and cook until they are slightly tender but still crisp. Return the cooked chicken to the pan, add chili flakes, and mix everything well. Season with salt according to taste. Garnish with chopped spring onions and serve hot.
