Classic Southern comfort food with homemade gravy and tender cube steaks that have been breaded and fried to perfection.
Ingredients: 4 4-ounce cube steaks. 1 cup all-purpose flour. 1 teaspoon salt. 1 teaspoon black pepper. 1/2 teaspoon garlic powder. 1/2 teaspoon paprika. 1/4 teaspoon cayenne pepper. 2 eggs. 1/4 cup milk. 1/2 cup vegetable oil. 2 tablespoons butter. 2 tablespoons all-purpose flour for gravy. 2 cups milk for gravy. Salt and black pepper to taste for gravy.
Instructions: Put 1 cup of flour, 1 teaspoon of salt, 1 teaspoon of black pepper, garlic powder, paprika, and cayenne pepper in a shallow dish. Mix the ingredients together. Whisk the eggs and 1/4 cup of milk together in a second shallow dish. Put one cube steak into the flour mix, then the egg mix, and finally back into the flour mix, pressing to stick. Put the vegetable oil in a big skillet and heat it over medium-high heat. It will take about 4 to 5 minutes on each side to cook the cube steaks until they are golden brown and crispy. Take the steaks out of the pan and put them on paper towels to drain. Over medium heat, melt the butter in the same pan. Add 2 tablespoons of flour and mix it in. This should take about one minute. To make it smooth, slowly whisk in 2 cups of milk. Cook, whisking all the time, for about 5 minutes, or until the sauce thickens. To taste, add salt and black pepper to the gravy. Add gravy to chicken fried steaks before serving.
