This healthier version of Chicken Cacciatore is packed with flavor but lighter on calories. It's a perfect weeknight dinner option that's quick to make and delicious to eat.
Ingredients: 4 boneless, skinless chicken breasts, cut into bite-sized pieces. 1 tablespoon olive oil. 1 onion, chopped. 2 cloves garlic, minced. 1 red bell pepper, sliced. 1 green bell pepper, sliced. 1 can 14 oz diced tomatoes. 1 can 6 oz tomato paste. 1 teaspoon dried oregano. 1 teaspoon dried basil. teaspoon dried thyme. Salt and pepper to taste. 8 oz whole wheat pasta. Fresh parsley for garnish optional.
Instructions: Warm up the olive oil in a big pan over medium-low heat. Put in the minced garlic and chopped onion. Saut until the onions are soft. Put in the chicken pieces and cook them until all sides are browned. Sliced bell pepper, diced tomatoes, tomato paste, oregano, basil, thyme, salt, and pepper should all be added now. Simmer for 20 minutes, stirring every now and then. In the meantime, cook the whole wheat pasta until it's al dente according to the directions on the package. Put the chicken cacciatore on top of cooked pasta. If you want, you can add fresh parsley on top.

Salt and pepper to taste. 1/4 cup chopped fresh parsley.
Instructions: In the slow cooker's bottom, put chicken breasts. On top of the chicken, put sliced bell pepper, chopped onion, and minced garlic. Add the tomato paste, chicken broth, red wine, Italian seasoning, salt, and pepper to a different bowl, and mix them together. The tomato sauce should be poured over the chicken and vegetables in the slow cooker. When the chicken is done, cover it and cook on low for 6 to 8 hours or high for 3 to 4 hours. Add chopped fresh parsley on top of the chicken cacciatore when you serve it over cooked pasta or rice.
