Ingredients: 4 boneless, skinless chicken breasts. 8 jalapeno peppers, halved and seeded. 8 slices of bacon. 1 cup cream cheese. 1 cup shredded cheddar cheese. 1/2 cup breadcrumbs. 1/2 teaspoon garlic powder. 1/2 teaspoon onion powder. Salt and pepper to taste. Chopped fresh cilantro for garnish optional.
Instructions: Set the oven temperature to 375F 190C. Combine the cream cheese, cheddar cheese, onion powder, and garlic powder in a mixing bowl. Blend thoroughly by mixing. To taste, add salt and pepper to the chicken breasts. On each chicken breast, generously spread a layer of the cream cheese mixture. After putting two halved jalapeo peppers on each chicken breast, wrap each one with two bacon slices and fasten them with toothpicks. After putting the chicken breasts in a baking dish, evenly coat them with breadcrumbs. Bake for 25 to 30 minutes, or until the bacon is crispy and the chicken is thoroughly cooked, in a preheated oven. Take out of the oven and, if preferred, top with chopped cilantro.
