A tasty and refreshing salad with grilled chicken that is juicy, mixed red and green grapes, fresh herbs, and a hint of feta cheese for the right amount of sweet and salty.
Ingredients: 2 boneless, skinless chicken breasts. 1 cup red grapes, halved. 1 cup green grapes, halved. 2 cups mixed greens lettuce, spinach, arugula, etc.. 1/4 cup fresh basil leaves, chopped. 1/4 cup fresh mint leaves, chopped. 1/4 cup chopped red onion. 1/4 cup chopped walnuts. 1/4 cup crumbled feta cheese. Salt and pepper to taste.
Instructions: Season chicken breasts with salt and pepper. Heat a grill or grill pan over medium-high heat and cook the chicken for about 6-8 minutes per side until cooked through. Let it rest for a few minutes, then slice it into thin strips. In a large bowl, combine the mixed greens, red and green grapes, chopped basil, chopped mint, chopped red onion, and chopped walnuts. Add the sliced chicken strips on top of the salad mixture. Sprinkle crumbled feta cheese over the salad. Drizzle your favorite salad dressing over the salad or serve with balsamic vinaigrette. Toss the salad gently to combine all the ingredients. Serve immediately and enjoy!
