Heading off to San Diego Comic Con tomorrow but time for a podcast meal! Fried Chicken Adobo! Yes, I visited me & co-host's @jonhoche's ancestral roots & put a twist on it. Started w/ 3 large chicken breasts. Seasoned with salt/pepper/bacon salt/paprika. Cut into small chunks. Set aside. I then made the adobo marinade. Soy sauce/rice wine vinegar/dark brown sugar/minced garlic/bay leaves/jalapenos/peppercorns/ground pepper/lemon zest/sweet chili sauce. Mixed it up until sugar dissolved. I placed chicken pieces in & mixed well so every piece was covered. Let sit overnight in refrigerator. Few hours would have been fine but it ended up being about 10 hours. Next day (today), I pulled out chicken/adobo marinade. Filled large bowl w/ flour. Set aside. Carefully strained adobo sauce into another container making sure to wipe off any garlic, jalapeno, peppercorn, etc from chicken. Chicken was beautifully dark & full of the adobo! I placed the chunks in bowl w/ flour. Mixed up til all covered. Then egg washed each piece & then back in the bowl of flour to cover again. Let sit as I heated up oil in pan. Meanwhile, I had started on some rice w/ salt & butter to taste. Let simmer til ready. Also chopped some multi-colored cherry tomatoes & green onions into slices. Heated up some green beans w/ butter/salt/pepper. Set aside. Back to chicken. Dropped in chicken a piece at a time to fry up in batches. Turned out beautiful golden color! As I was doing this, I put adobo sauce into a small pot to simmer. All done! Plated chicken w/ white rice/green beans. Spooned adobo sauce over chicken/rice. Dropped cherry tomatoes/green onions over it all. Finally, sprinkled some sesame seeds on top. HOLY MOTHERLAND WAS IT DELICIOUS!!! Chicken was crunchy & had that adobo taste to it w/o even adding more of the sauce on top of it. (We taste tasted it separately first). Added sauce was a bonus. An old Filipino dish that's easy to make in the Instant Pot! A sweet and savory sauce with garlic, bay leaves, and black peppercorns is used to cook tender chicken thighs.
Ingredients: 3 lbs chicken thighs, bone-in, skin-on. 1/2 cup soy sauce. 1/2 cup apple cider vinegar. 1/4 cup brown sugar. 6 cloves garlic, minced. 1 tsp black peppercorns. 2 bay leaves.
Instructions: Apple cider vinegar, brown sugar, garlic, black peppercorns, and bay leaves should all be put into the Instant Pot together. Put the chicken thighs in the pot and make sure they are covered in sauce. Place the Instant Pot lid on top and set the timer for 15 minutes. After the cooking time is up, let the pressure drop naturally for 10 minutes and then do a quick pressure release. Carefully take the chicken out of the Instant Pot and put it on a plate to serve. You can broil the chicken in the oven for a few minutes if you want to make the skin crisp. Serve the chicken adobo hot with steamed rice and chopped green onions on top. Have fun!
