✿ キアニーナ牛 | Chianina ・キアーナ牛は、トスカーナ州東部からウンブリア州方面に広がるキアーナ渓谷に由来している。イタリアを代表する最高級ブランド「キアニーナ牛」は、大昔から存在するイタリアの在来種で、世界中の牛の祖先と言われている。古代エトルリア時代でも飼育されており、古代ローマ時代にはキアニーナの白さや大きさが神聖なものとして崇められ、生贄に捧げられたといわれている。 ・キアニーナ牛は、もともと肉質が柔らかく、たんぱく質が豊富で、コレステロール値が他の牛と比べても低い。また風味の良さだけでなく、肉質は繊細さをもっている通常の牛肉は、２５％のコレステロール値に対して、キアニーナ牛は５％以下といわれているほど、圧倒的に低い。

Un altro giorno che se ne va… #lavoro, lavoro, lavoro… e poi vado all’esselunga mi compro la carne #chianina di prima qualità me la sminuzzo da me per bene per fare un buon #tartare con le #olive e #capperi, un tuorlo d’uovo crudo e un filo d’olio quello buono sempre #chiantigiano. Una #birra #Heineken da bere, la mia preferita. Una roba da cinque stelle altroché lo #chef del più prestigioso #ristorante. Piove a dirotto e, sinceramente, speravo in un buon riposo domani. Ne ho davvero bisogno invece… dovrò lavorare fino alle 20 ed inizierò alla mattina alle 10:00. Non riesco a fermarmi! Ho sempre paura che il mio lavoro possa giungere a termine da un momento all’altro. Mi #felicito che ho l’opportunità di farlo e vado avanti! C’est la vie!
