This is one of the simplest and nicest soups you will ever make I promise you. Itâs called âRoyal cheese and potato soupâ. Taken from the @downtonabbey_official unofficial cook book, I made this for a dinner party last weekend. It went down a treat. All you need is two potatoes, two white onions, six cloves of garlic, six cups of chicken stock, I cup of full cream, a tea spoon of English mustard, one table spoon of butter and two cups of grated cheddar cheese. Melt the butter in the pan and add the peeled and chopped garlic and potatoes to the pan. Stir well and cook for 10 minutes on a medium heat. Add the chicken stock and bring to the boil. Simmer gently for a further 10 minutes. Remove the potato and onion and blitz into a pulp. Heat the cream in a pan and add the mustard. Add that to the blitzed potatoes and season to taste. Add the grated cheese and stir until the cheese is melted. Serve with crusty bread. Ingredients: 1/2 cup butter. 1/2 cup all-purpose flour. 4 cups chicken broth. 1 cup beer your choice. 1 cup diced onion. 1 cup diced carrot. 1 cup diced celery. 2 cloves garlic, minced. 1 teaspoon dried mustard. 1/2 teaspoon paprika. 1/2 teaspoon cayenne pepper. 1/2 teaspoon salt. 1/4 teaspoon black pepper. 4 cups shredded sharp cheddar cheese. 2 cups half-and-half cream.
Instructions: In a skillet, melt butter over medium heat. Stir in flour until smooth. Gradually add chicken broth and beer, stirring constantly. Transfer mixture to slow cooker. Add onion, carrot, celery, garlic, dried mustard, paprika, cayenne pepper, salt, and black pepper. Cover and cook on low for 4-6 hours. Stir in cheddar cheese until melted. Gradually stir in half-and-half cream. Cover and cook for an additional 30 minutes, or until heated through.

Reduce heat and add Monterey Jack and cheddar cheeses, stirring until melted and smooth. Stir in Dijon mustard, and season with salt and pepper to taste. Simmer for an additional 10 minutes, allowing flavors to meld. Serve hot, garnished with chopped fresh chives.
