This grilled summer vegetable pasta salad is bursting with flavors of charred vegetables, tangy balsamic, and fresh basil. It's a perfect side dish for any summer gathering or a satisfying main course for a light dinner.
Ingredients: 8 oz pasta. 1 zucchini, sliced. 1 yellow squash, sliced. 1 red bell pepper, sliced. 1 red onion, sliced. 1 cup cherry tomatoes, halved. 1/4 cup olive oil. 2 tablespoons balsamic vinegar. 2 cloves garlic, minced. Salt and pepper to taste. 1/4 cup fresh basil, chopped. 1/4 cup grated Parmesan cheese.
Instructions: Follow the directions on the package to cook the pasta. Remove the water and set it aside. Warm the grill up to a medium-high level. Chop up the red onion, red bell pepper, cherry tomatoes, zucchini, and yellow squash and put them in a bowl. Add the olive oil, balsamic vinegar, salt, and pepper. For about 5 to 7 minutes, turning the vegetables every now and then, grill them until they are soft and slightly charred. Put cooked pasta and grilled vegetables in a large bowl. Toss in the grated Parmesan cheese and fresh basil. You can serve it hot or cold. Have fun!
