ik it’s a little late but I got so many compliments on my latkes and if anyone wants to try them, feel free and let me know how they were!!
2:1 ratio of potato to eggs, use as many potatoes as you think you need to feed your people (four large Idaho potatoes will most likely feed two to three people. If you’re making it for yourself, use two Idaho potatoes)
1 onion per six potatoes, cut it in half if you’re using less than four
1 tablespoon salt, sprinkle of pepper
prepare the eggs, salt, and pepper in a bowl, pop the eggs and mix the mixture with a fork very well.
Mix the potatoes and onions with a food processor (not the blade attachment, the grating one. I like the finely grated, but if you prefer stringy, that’s okay, either way is delicious)
this step is super important, you need to transfer the potato mixture into a sieve or strainer to get all the water out, and make sure when transferring that there are no large potato or onion chunks.
put the potato mixture into the egg mixture and mix very very well
put a large frying pan on the stove on medium heat, and pour in enough oil to fill the entire thing, let it heat through
Use a spoon and make little pancakes on the frying pan with the latke mixture, they should start sizzling. It should take about 4-5 minutes on each side. They should look nice and brown after that. Transfer to a plate with a paper towel or napkin to catch the excess oil. Enjoy!!
