Elevate your barbecue experience with this Grilled Shrimp Ceviche, a perfect blend of smoky grilled shrimp and vibrant, zesty flavors. Quick and easy to prepare, it's an ideal appetizer for any outdoor gathering.
Ingredients: 1 lb large shrimp, peeled and deveined. 1 cup cherry tomatoes, halved. 1/2 red onion, finely diced. 1 jalapeo, seeded and minced. 1/2 cup fresh cilantro, chopped. 1/2 cup fresh lime juice. 2 tablespoons olive oil. Salt and pepper to taste. Tortilla chips for serving.
Instructions: Warm up the grill over medium-high heat. Put shrimp, cherry tomatoes, red onion, jalapeo, and cilantro in a bowl. Add the olive oil, salt, and pepper to a different small bowl and mix them together using a whisk. Add the lime juice mixture to the shrimp and toss to coat everything. Stick shrimp on skewers and cook them on the grill for two to three minutes on each side, until they are fully cooked and slightly charred. After taking the shrimp off the skewers, add them back to the lime juice mixture and give them one last stir. Chips should be served with the grilled shrimp ceviche. Enjoy the bright and tangy tastes of this BBQ treat!
