Cecina à la pisane — parcours gourmand et local
La cecina, fine galette de farine de pois chiches, huile d'olive et sel, se déguste chaude, dorée et légèrement croustillante sur les bords. Adresses clés : Forno San Gallo (Via San Michele, 8 — mar–dim 7:00–14:00, 2–4 € la part), Mercato delle Vettovaglie (piazza delle Vettovaglie — matins, étals variables, 2–5 €), Trattoria da Lamberto (Lungarno, 12 — jeu–dim 12:00–22:00, 4–7 €) et la petite friggitoria di quartiere chez Ivo (Via Santa Maria, soirée, 2–3 €). Ambiance : fournaise rurale, fumet d’huile, clients pressés ou locaux attablés.
