Hello! My gf wants to basically play Girls Last Tour the Video Game. Key elements: post apocalyptic aesthetic, strong focus on wandering around or traveling. None to low levels of combat. Maybe a walking simulator or an easier survival? I suggested The Witness as a possibility, but that was too cheery or soft. She'd like Fallout but a lot less battling and less people. Peaceful Minecraft or BOTW but apocalyptic and more ruined realistic aesthetic. Do you have any ideas? Thank you for your time!!
Maybe Submerged? It’s a zero-combat walking (or, more accurately, climbing) sim about a young woman searching a half-flooded city for medical supplies for her sick brother. It’s not actually possible to die, and the game won’t even let you fall off of stuff, so there aren’t really any failure states. Fair warning if your girlfriend has problems with heights, though; some of the camera angles can be very vertiginous. On the plus side, it’s 90% off for the Steam Winter Sale at the time of this posting, so if it doesn’t suit you’ll only be out a couple of bucks.
Other, possibly less suitable options include Elegy for a Dead World (more of a guided writing exercise than a game per se), FAR: Lone Sails (incorporates light puzzle-platforming), OPUS: Rocket of Whispers (super depressing frame narrative – which may well be a selling point!), Some Distant Memory (very restricted arena of play), The Talos Principle (potentially the same issue as The Witness) and TIMEframe (just plain weird).
Forthcoming titles to keep an eye on might include Eastward, Encodya, Minute of Islands, Röki, Signs of the Sojourner and Voyage.

THANKS! Ironically dealing with the actual moving stuff isn’t that bad (it helps that I only about half unpacked when I moved in, that I’m only moving like a mile away, and that I don’t have a ton of stuff), but there’s been some...interpersonal drama (which is actually the reason I’m moving in the first place, it’s just now a lot of it condensed into a few weeks).
I’m moving to a 1 bedroom by myself, so for the first time I won’t have to worry about sharing my space with someone else, which will be a huge relief.
