This week's main focus will be a great replacement of a Champagne🍾 during the holidays🎄, a spanish sparkling wine made with the traditional method. It is called Cava🥂 and comes from Catalonia🇪🇸 and uses indigenous grape varieties (Macabeo🍇, Xarel-lo🍇 and Parellada🍇) in the blend. _____ Our Cava is from Freixenet, a huge copmany which deserves another post✍, there is so much to know about them, they produces huge quantities of Cava🍾 from the entry level to premium quality👌. Today's Cava is somewhere in the middle range, a Premium Carta Nevada Seco, a non-vintage sparkling🥂. _____ It has a pale lemon colour with medium sized, fine bubbles. A good effervescence. I can detect lemon🍋, orange🍊, pineapple🍍, with a little bit of brioche🥐 and yeasty character on the nose. _____ The 👅 shows a dry wine with high acidity, medium alcohol, medium body and notes of peaches🍑, pear, orange🍊, lemon🍋 with this brioche🥐 on the beckground. It has a medium plus pleasant finish which lingers on the tounge. _____ A good quality Cava made for drinking in the moment when it is chilled🧊 to 6-8°C. Perfect on its own as an aperitif, I was even using it to make Aperol Spritz🍹 (it was excellent) and would pair well with seafood and row fish🍣 or even with salads🥗 and chicken. _____ Just a little note✍: I was even drinking it when I had to enhance lactation🍼 for the baby at the beginning and it turns out, sparkling wines🥂 are a thing for that!
