Isaac proudly puffs his chest out, despite that what he's saying is of incredibly debatable accuracy. That said, he also doesn't seem like he's putting on any sort of false bravado, so it's likely he really does think he could carry on forever without resting.
"Now, it may not be the safest to go without rest, you're right... But I've heard that if you pretend you aren't tired, you stop feeling tired to begin with! Isn't that amazing?!" Isaac laughs wholeheartedly. His declaration probably might seem a lot more worrying from an ordinary person's mouth; as it stands, Isaac is treating the discovery as a wholehearted fact. "Not only that, but I have too much drive to rest right now!"

As a sort-of insensitive person, it's a little hard for Edith not to chuckle, but she's fortunately used to having to keep her emotions hidden away as both a service worker and an employee under a crime family.
It's not either of those things keeping her locked-up now, of course; it's just a sense of basic sympathy. How many times has she made similar rants to other people who graciously listened to her and didn't laugh at her problems?
... Well, most of them did laugh at her problems, but remembering how bad that felt is also a good instrument for practicing self control.
"Well, that's how it is, sometimes," Edith supplies unhelpfully. Despite her general willingness to listen, she's not actually great at helping people solve problems. "You've got every right to be pissed, though. That person sounds like a real jerkoff... I guess I shouldn't say that kind of thing around a kid. A real---... Well, I guess jerkoff is fine. Anyway, you could always get 'em back."
It's definitely inappropriate advice, but Edith is among the lower end of people who can deal with problems in a healthy way. "When the other waitresses would try and steal my tips, I got 'em blacklisted from working in the area at all. So, you know, something like that might make you feel better."

My wheel picked Kate Gandor for this question, which I actually think is very interesting!
The basic answer is yes. Kate does believe there are times when violence is warranted---she would not be able to sustain a loving marriage with someone like Keith, a mafia don, if she did not on some level condone some amount of violence.
That's not necessarily to say she likes or enjoys violence or would ever resort to violence herself, but she definitely believes there are cases where it's warranted. I do think Keith actually had a hand in her belief of this, since beforehand she'd had a very detached view of violence.
