my carbink really loves hovering above the pot and watching me cook - I just wanna make sure the steam and heat aren't going to hurt them? they don't eat it (unless I'm making poke treats, when I let them taste test)

it's good of you to make sure it's okay! that's what a responsible trainer does. thankfully you don't really need to worry about this haha.
carbink are formed by extremely high pressure and temperature deep underground. the heat from a bit of cooking steam is not going to bother a carbink one bit. constant exposure to steam would eventually start to to wear away at its body, but it would take many, many, many of your lifetimes of nonstop pasta making or what have you with your carbink's face right in the pot to do any sort of damage.
the bigger concern with cooking while a pokemon is right there is the potential for the pokemon to get startled (one time jelly baby got spooked by some oil popping and exploded a pickle jar about it) or for other cooking-related accidents to happen. ideally you should keep your pokemon out of the kitchen or at least away from the stove while cooking...but a carbink is a fairly low risk compared to something that could more easily get a temperature-related burn.

Jacinthe gets a Tera Orb from probably the Academy in Paldea (maybe Blueberry Academy instead. I could see her having visited Unova at some point. Makes me wonder if she knows Nemona or Lacey) and I guess Terapagos has been putting crystals everywhere given I know people will āerm akshullyā me if I donāt mention why Jacinthe is Terastalising outside Paldea, Kitakami and the Terarium and she discovers that every PokĆ©mon is valid to be your favourites not just the ones with Megas

This isnāt necessarily a series Iām going to be doing (I shouldnāt really say whether or not it is to be fair) I just thought Jacintheās Tera ace was an interesting conversation (more interesting than forcing all SV characters to limit their teams so they can all have a Mega ace. On a related note if you pick the Obligatory Clefable mention option I fully believe you force SV characters to become Mega trainers without forcing Z-A characters to become Tera trainers. The same doesnāt go for Flying Tera Clefable). I also fully believe Lidaās Tera ace would be a Water Tera type Quaquaval and itās a crime they made a Water-type dancer PokĆ©mon and a Water specialist dancer in the same gen and then made them exclusive to different (pairs of) games. At some point Masters is gonna give Lida a Quaquaval I just know it (can Naveen get a Meowscarada to match? Then Urbain and Taunie can match too by getting Armarouge and Ceruledge in some order idk. I think theyād both work really well with Armarouge but I think I can see Urbain getting Ceruledge)
The SV locations and Z-A locations options have overlap. The way Iāve decided to separate the PokĆ©mon like Meganium that overlap is it specifically depends on where she catches the PokĆ©mon (Iām just assuming all PokĆ©mon in the overlap are obtained in a location from either SV or Z-A). If she catches and Terastalises a Meganium in Lumiose (or Hyperspace if you can get them there. I still havenāt got around to getting Mega Dimension) vote for āanything else from Lumiose/Hyperspace Lumioseā and if she catches and Terastalises a Meganium in the Terarium vote for āanything else from Paldea/Kitakami/the Terariumā. The very last option can include PokĆ©mon that are in SV but exclusive to events or are transfer-only but so can the Paldea/Kitakami/Terarium option
