You’ve heard of Tex-Mex but have you heard of Tex-Czech? Kolache Factory is a chain founded in Texas and the Tustin shop is their only CA location. They specialize in kolache, the Czech pastry that’s typically topped with fruit or a sweet topping. But Texas Czech features lots of savory kolaches as well, like pizza, Philly cheesesteak, Polish sausage (whole sausages), chicken enchilada, Italian chicken, and BBQ beef. They also had fruit topped kolaches, cinnamon rolls, sticky buns, croissants, and beverages.
The kolaches look pale. They’re about the size of Chinese baked buns but the dough is a lot softer. Of course, the fillings are much different too. Kolache Factory generously stuffs each kolache.
* Sausage & gravy kolache ($2.58): The dough is so soft, almost doughy. Inside, the kolache had crumbled breakfast sausage with that distinctive sage flavor and a bit of gravy. I liked it but it became a bit monotonous – maybe some mushrooms or onions would have been nice.
* Ranchero ($3.19) with ham, scrambled egg, cheese, jalapeno & salsa: This kolache had much more going on with so much egg and I liked the salsa too. There wasn’t much ham.
* Sausage, jalapeno & cheese: A mini sausage surrounded by cheddar cheese and a bit of jalapeno – simple but good, the soft dough is almost pillowy
Kolaches are more expensive than Chinese baked buns but they also have more filling.
